This is one very easy recipe for a toasted granola mix I like to have for breakfast.
Just add half a cup of the mix to your favourite yoghurt or pour some milk over it and there you go, healthy breakfast ready in no time.
You can tweak the recipe any way you like. I frequently change the fruits and nuts, depending on what’s in the pantry.
Keep the granola in an air-tight container in the pantry for up to 2 weeks.
3 cups plain rolled oats
1/2 cup each:
chopped dried apricots
dried berries mix (raisins, sultanas, cranberries, goji berries)
3 Tbs agave nectar or honey or maple syrup
Mix all the above ingredients in a big bowl. Try to coat everything evenly with the agave nectar.
Spread into a tray lined with baking paper.
Pop into 180C oven for 10 minutes.
Turn everything over with an egg slice and return into the oven for further 10 minutes.
Be careful not to brown the mixture too much – it will taste burnt.
Let it cool before transferring to storage container.
